It sounds like a magic spell, but looks like a compact layer of ancestral soil. Caranto is a maritime clay stratification with calcareous nodules, which started forming in the Pleistocene era (don’t try to count back, it was between 11 thousand and 2,5 million years ago). Caranto gives a peculiar mineral taste to the wines, playing a special role in our Prosecco.
Prosecco is a Charmat method sparkling wine, which means we start from a base wine made with Glera grapes and let it ferment for a second time in stainless steel tanks.
Time makes the difference: we make the second fermentation slow and at least 8 weeks long. This is what makes the perlage so fine and crispy.
The extra dry dosage makes the sip “sweeter but not too much”, creating that perfect balance between acidity, sweetness and savoury feeling.
